Two Simple Lunchtime Salads And A Beautiful Breakfast Out

Just a wee visual indulgence here. I do love taking photos of gorgeous food, almost as much as eating it.

And my eating has become so much more mindful since the children all went back to school. Funny that?!

Turkey salad

Cold turkey salad, the turkey is leftovers from a Steggles Shortcuts Thigh Roast. I was sent the range and blogged about that here. Then simple veggies and some leftover beans, a bit of balsamic vinegar and a splash of olive oil. Slurp.

Bean salad

I lightly steamed beans and used some here and kept the rest for the kids’ dinner, tomato from the garden and some mixed leaves. A very light lunch for a day when I wasn’t very hungry but fancied some crunch.

These bowls are huge by the way. I do love a bucketload of salad.

It’s good to feel full. Don’t you think?

Breakfast out at Dose cafe

This little beauty was breakfast out at a cafe.

Sourdough, pesto, grilled haloumi, avocado and roast tomatos.

I would so much rather eat gorgeous food that is good for me than hoe into white bread or shovel down a bucket load of creamy pasta.

But it DOES take time and effort to eat well and to enjoy eating.

Wow! These toasts with the pesto look amazing! I have some mint pesto I have done a while ago in the freezer. Thanks for the idea!

Oh, yum! Thanks for the simple salad recipes! I am always so chuffed with myself when I make myself a healthy lunch! I always enjoy it a lot more too!

One of my New Years Resolutions was to eat a salad a day. I failed a week in- time to get back on the horse. These salads make it look doable x

I have taken friends advice and cooked haloumi in the sandwich press. It works a treat. Only trouble is I gobble so much down and it’s so rich and fat-tastic!!

They look wonderful Seana! Love the brekky too – it’s always a delight when cafes properly roast tomatoes (undercooked ones are a pet peeve of mine!)

Ohh, they look scrumptious! I’m going to make the sourdough and pesto snack for our lunch tomorrow. I love salads too, and I’m experimenting more with warm salads.
