Zucchini Bread Recipe – Cinnamon-Spiced and Healthy

I like baking and the family likes eating cakes.  So that’s lovely.

If I can squeeze a few veggies into the cake so much the better, but my range is limited.

So many thanks to the exuberant Fast Ed and Eggs Australia who last week inspired some bloggers to go the egg-stra (sorry!) mile for our families’ health.

Here’s the first cake off the rank, a healthier version of zucchini bread, using wholemeal flour.  I was so overwhelmed when I scoffed some of Fast Ed’s that I whizzed to the shops with the kids after school, then parked them in front of ABBCKids and knocked one up.  In the photo Fast Ed’s is at the top, mine is at the bottom.

Zucchini Bread- Cinnamon Spiced

It’s a really simple recipe for a totally scrumptious cake!

ZUCCHINI BREAD RECIPE- FAST ED’s CINNAMON-SPICED

Preparation time: 10 minutes

Cooking time: 45 minutes

Makes 1 loaf

375g zucchini

165g golden syrup

90ml vegetable oil

3 eggs

210g wholemeal self-raising flour

1 tsp baking powder

1½ tsp ground cinnamon

low-fat ricotta, honey and berries, to serve.

1. Preheat oven to 180C. Coarsely grate the zucchini and squeeze to remove the excess moisture. Transfer to a bowl and mix with the golden syrup, oil and eggs. Beat well.

2. Sift in the flour, baking powder and cinnamon and mix thoroughly until smooth. Set aside to stand for 5 minutes.

3. Spoon the batter into a lined medium loaf pan (1L capacity) and bake for 45 minutes, until a skewer can be inserted and removed cleanly. Cool in the tin, then serve warm with low-fat ricotta, honey and berries.

COOK’S NOTE: These take 28 minutes when baked as ½ cup muffins.

The kids loved it and ate loads, husband loved it and ate loads.

I loved it and ate one slice… slowly… and enjoyed it enormously.

Will definitely make it again… in fact, I have some zucchini in the fridge right now….

My mouth is watering Seana…..yum! Love vegie cakes. Will definitely be baking this soon.

I’ve heard about chocolate and broccoli cake (never made one, but think I’ll track down the recipe). And of course there’s choc chip and chickpea cookies…very popular in our house…

One cake I do have the recipe for though is Chocolate & Potato cake. I used to make it all the time for my housemates (over 10 years ago!). You’ve inspired me to dig it out and give it a whirl on the blog. Thanks!

Please do find the choco and potato, and choc and brocc is intriguing. I’ve never tried choc chip and chickpea… so must give that a whirl…. the more legumes the merrier here. Just done meal planning and off shopping after pickups.

This summerr I grew lots of them, first time I’d tried, they were wild! But now having to buy them again. I love sneaking them into things as only one of the kids really likes them as they are.
